UIS to host celebration of Peruvian Independence Day July 16, 2003 SPRINGFIELD The University of Illinois at Springfield will host a celebration of Peruvian Independence Day featuring authentic food, music, and dance from 6 to 10 p.m. Saturday, July 26, in the Housing Commons Building on the UIS campus. Dinner, beginning at 6:30 p.m., will offer dishes such as causa (a dish consisting of potatoes and hot peppers, garnished with olives, cheese, eggs, shrimp or fish), arroz con pollo (chicken and rice), and Inka Cola (a traditional Peruvian soft drink). An opening ceremony will begin at 7 p.m. and entertainment will begin at 7:30 p.m. featuring the Afro-Peruvian Folkloric Dancers from St. Louis and La Morena, Eileen Wolfington, who will perform dances from Mexico and Latin America. At 8:30 p.m. the dance floor will open to the audience, with music provided by Image Inc. The event is sponsored by the UIS Office of International Affairs, Image Inc., and the Springfield International Visitors Commission. Tickets are $10 including dinner, and are available at the door.
